Learn to make Frozen Watermelon Southsides from the comfort of your own home with Republic of Fremantle’s Aromatic Gin

Created by Head Bartender Max Giudice, this drink is a play on the retro southside cocktail and is perfect for those hot summer days relaxing by the pool. 

Enhanced with citrus and tonic, Republic of Fremantle’s Aromatic Gin comprises a subtle taste of fresh apricots and a lively honeyed ginger finish. As the drink progresses, delicate lavender floral notes slowly reveal themselves.

An award-winning gin at the 2021 San Francisco World Spirits Competition and the 2022 London IWSC.

As with all of Republic of Fremantle’s spirits, the Aromatic Gin is made from locally-sourced Verdelho grapes from 100-year-old vines in the Swan Valley.

How To Make The Frozen Watermelon Southside 

To make the Frozen Watermelon Southside, mix 45ml of Republic’s Aromatic Gin, 25ml of lime juice, 15ml of sugar syrup, half a watermelon (or a whole if you’re serving a group), and fresh mint. 

A few hours before making the drink, flesh out the watermelon and blend before freezing it into a large ice cube tray. 

Once the watermelon has frozen, blend all the ingredients together and add the fresh mint to garnish. 

The Aromatic Gin also works well in a French 75 cocktail or a Wet Martini.
