The Republic of Fremantle is a craft distillery in the heart of Freo’s historic west end. With a sleek, urban bar serving up their house-made spirits in a mix of modern and classic cocktails along with a fresh menu of share plates and aperitivo style snacks.
The Republic of Fremantle has been making headway with their internationally acclaimed flagship range collecting several medal awards in their first this year, including Best International Contemporary Gin at American Distillers Institute awards for their Full Bodied Gin.
Republic of Fremantle are doing things differently with their distilling processes. Sourcing wine from 100-year-old Verdelho grapevines in the Swan Valley in Western Australia, to distil into vodka and then gin.
Their innovative grape-to-glass distilling process gives life to silky-smooth vodka and gin with greater complexity of flavour and aroma. Intentionally retaining honeydew melon and floral characters of the Verdelho during distillation for rich, vibrant aromatic flavours and a luxurious mouthfeel as the spirit glides over the palate.
