Beyond Distilling Finds A New Home In The CBD

Head to Spring on Queen for Beyond Distilling’s new pop-up.

Spring on Queen is the home of Beyond Distilling’s new Perth CBD pop-up. Set to open on September 4th, the concept nods to the venue’s gin-centric history as The Flour Factory.

Inspired by nature

Bringing flavours and inspiration from each corner of the state, Beyond Distilling — helmed by Master Distiller Greg Garnish alongside former Eagles teammates Chris Masten and Josh Kennedy — invites you to take a moment and “Be Still” amongst the hustle and bustle of the CBD.

Established in WA’s South West, the distillery sources native botanicals from Broome to Fremantle, extending all the way to the state’s south and Mid West. Think organic Lemon Verbena and Kapoor Tulsi from Nannup, saltbush from Busselton, fresh and dried citrus from Harvey and Busselton, Boronia from Margaret River, and Geraldton Wax from Geraldton.

Masterclasses, workshops, and museum release tastings

With the introduction of ten baby copper stills at the Queen Street location, guests can get up close and personal. All while learning the craft of distilling through intimate masterclasses, “Make Your Own Gin” workshops, and access to exclusive museum release tastings. 

Not to mention Beyond Bottomless lunches and a Curated Cocktail Degustation experience, with dishes from Spring’s seasonal menu matched with expertly crafted cocktails. The famous Flour Factory gin wheel may even be making a comeback appearance — but you didn’t hear it from us.

Diverging from industry norms, Beyond Distilling crafts its base alcohol in-house, using locally grown barley and Margaret River wine for fermentation and distillation. This hands-on single grain approach ensures unparalleled quality control and an authentic connection to the land.

The core Beyond range includes vodka and three gin varieties, while their cocktail collections offer small-batch whiskey, brandy, rakija, and pre-mixed cocktails. Each bottle is also hand-filled and decorated with artwork by WA’s Lauren Kennedy. 

The pop-up distillery will be open from Wednesday to Saturday for drinks and walk-ins.
