A new food and wine spot recently opened in Subiaco — Intuition Wine & Kitchen — and intuition isn’t just in their name. It’s the philosophy behind everything they do.
Mathieu Wyatt, owner and operator of Intuition Wine & Kitchen, has a long and storied background in the hospitality industry. Mathieu comes from a city in southern France called Montpellier, where his journey began. From being a chef in Michelin Star restaurants in France, to eight years as Head Chef at Chez Pierre — one of Perth’s best French restaurants — Mathieu knows his way around a kitchen and has developed a keen intuition for how to create amazing food experiences, instinctively.
That instinct or ‘intuition’ is where the name of this cute and cosy venue comes from.
French background; Mediterranean focus

Most would think that with such a storied background in fine French food, this venue would follow that trend. And while Mathieu has brought his French flair to the venue and its menu, Intuition Wine & Kitchen is much more than that. The menu blends French, Italian, and Spanish flavours to create a memorable Mediterranean dining experience.
The interior design also follows that Mediterranean feel with relaxed tones throughout, and an alfresco area where you could easily sit back and while away the hours, enjoying the company of friends and family over a glass of wine and some shared dishes.
A wine list that’ll expand your palette

As you can imagine, the wine list is one of the most important parts of any venue. And Intuition Wine & Kitchen has curated a range of wines that will impress even the most discerning oenophile.
The wine list currently features more than 80 wines to choose from, and most of them are not ones you’ll see anywhere else. While you’ll find a few wines from Margaret River and South Australia on the menu, the main focus is on the Mediterranean. You’ll find a strong selection of Italian and French red and white varieties, with a few Spanish wines also included. You’ll also find a few wines from Mathieu’s home city of Montpellier in France, which is quite rare in Perth.
It’s a wine list that’ll encourage you to try something a little bit different, and if you don’t know where to start, Intuition’s sommelier can point you in the right direction and recommend some wines for you.
Food that is simply moreish

The main reason to make this your new favourite Subiaco venue, as you can imagine, is the food. And you’d expect nothing less, given Mathieu’s background.
Following the theme of the rest of the venue, you’ll find a considered menu consisting of Mediterranean fusion dishes, all made with a French flair.
Our favourite dishes so far?
The WA Octopus was exquisite, which comes served with a romesco sauce, smoked chat potatoes, mojo verde, paprika tuile, with a lemon balm. It’s also visually stunning.
The Spanish Croquettes with shaved Prosciutto ham bring a melt-in-your-mouth texture and will have everyone wanting more.
And, for something a little more substantial, the Stirling Range Eye Fillet with wild mushroom, stuffed conchiglioni, brioche mousseline, crispy enoki, and an Italian truffle jus is everything. This dish got a ‘wow’ from all of us, and challenges for the unofficial title of Best Steak in Perth.
