Vodka or gin? Clean or dirty? Wet or dry? The choice is yours at Margot’s, Northbridge’s new martini and wine bar curated by the team behind CBD newcomer Papi Katsu and Subiaco institution Shui. The best part? It’s opening on William Street on Thursday, August 1st.
Margot’s Wine Bar

“Margot’s is your small bar that toes the line between decorum and debauchery. Depending on the kind of time you’re looking to have, whether you’re popping in or staying for a while,” Sesh Mafia’s Benny Tua said.
“We wanted to bring fun to this end of William Street and have an all-star team to deliver it.”
Barry Baltinas and Rebecca Frost from award-winning design studio Baltinas Architecture are behind the build, transforming the 100-year-old space into a multifunctional modern venue comprising a deli, cellar, and bar dedicated to the classic cocktail.
Keeping West Australian materials at the forefront, the 120-person venue incorporates an earthy palette of deep rouge, dark woods, and brown leather, with the space’s original jarrah floorboards a nod to its rich past.
The Baltic and North-Eastern European-inspired menu has been sharply executed by Sesh Mafia’s Culinary Director Chase Weber, with Head Chef Branagan McGann on the pass.
Share plates and charcuterie

Share plates include seasonal pickles, local meats, both cold and cured seafood, charcuterie by Adam Bielawski, and stone-baked breads taking centre stage in the kitchen.
“We want the deli to be somewhere that you can find things you wouldn’t be able to get in your average store,” McGann said.
“High-quality products, with a focus on WA producers, made in-house or by local suppliers, is a mainstay of the deli. If someone enjoys our charcuterie plate, or a terrine in the bar, we want them to be able to pick one up on the way out, along with a wonderful WA wine.”
From behind the custom-built Pilbara red marble bar, expect an extensive drinks menu by Sesh Mafia’s Beverage Director Eoin Kenny and Bar Manager Nicola Herbert. We’re talking iterations of martinis, classic cocktails, and an old-world European-leaning wine list that can be enjoyed inside the stylish space.
Complimenting this is their extensive selection of West Australian wines, spirits, and pre-made beverages available in the bottle shop for drink-in ($25.00 corkage) and takeaway.
Elegant but unpretentious, celebrating all things WA

“Margot’s is an elegant but non-pretentious bar that celebrates the fun of martinis and wine. We’re putting theatre back into it and have sourced an eclectic collection of porrón to facilitate. It’s going to be joyous.”
Continuing the commitment to hero all that West Australia has to offer, guests can look forward to regular tastings by local breweries, wineries, and distilleries in the bottle shop space and deli.
There will also be the opportunity for patrons to purchase bottles from the wine list curated by Sommelier and Venue Manager Caitlin Tormay, home-grown products by WA’s artisanal creators, and an exclusive range of charcuterie and accompaniments that can enjoyed in-venue or at home.
“Every aspect of this venue has been carefully thought out and curated. Everything is designed for a comfortable, seamless experience, with an incredible team of hospitality pros who have worked in some of Perth’s best bars and restaurants making that happen,” Tormay said.
“Margot’s is meant to feel like home — a home just happens to have incredible food and drinks.”
Margot’s will be primarily operating on a walk-in basis, with bookings only available for groups of six or more. Bookings will be available from August 8th.
