After nearly three years, 2022 WA Bar of the Year Republic of Fremantle has officially opened the doors to the final stage of its venue.
This final piece will see the 300-person venue offer everything from bar snacks, to bistro-style dining, and curated distillery experiences.
There’s also a refillable station for Republic’s award-winning spirits which includes its Signature Vodka, Aromatic Gin, and Full Bodied Gin.
Diners can now enjoy a completely new restaurant and dining experience — further extending Republic of Fremantle’s ‘from scratch’ philosophy.
The new restaurant was designed by Fremantle-based architects, spaceagency, with the design details naturally considered.
From the vantage point of the mezzanine level to the handmade light fixtures and textural finishes, the industrial working distillery is the perfect space to enjoy cocktails, dinner, and conversations.
Republic of Fremantle’s Head of Hospitality, James Pennefather, said they wanted to make sure the place had something for everyone to enjoy.

“From settling in for a pre-dinner cocktail or tasting in the front bar, or perhaps enjoying a light snack before you’re seated in front of the incredible Mueller still — that’s when the full dining experience will begin,” he said.
“Whether it’s sipping on paired cocktails with each course, enjoying a tasting flight of our signature range, or rounding it out with a nightcap and a take-home bottle of spirits to enjoy in your home bar – whatever your preference we now have it all under one roof at the Republic.”

The kitchen and bar team are doubling down on the local farmers, artisans, and growers to bring the very best produce of Western Australia to its tables.
Head Chef, Emily Jones, will hero the open flame and embrace the flame-forward style of cooking. Proteins will be rotated and paired with flavour-forward sides designed to be shared or enjoyed solo.
“We’ve spent some serious time developing the new menu, but naturally our suppliers influence the direction each season,” Pennefather continued.
“For the dishes cooked over a flame, it’ll be a matter of seeing what we have available to us on the day – but whether it’s Futari Wagyu or fish caught fresh on the Bowithick boat – we know it’ll be sensational.”
Diners and bar-goers can expect a few surprises when they visit their favourite bar.
“We like to keep things interesting – the cocktail menu always does that for us, but we’re also bringing in a few fun elements like the fresh, vibrant Apple Southside – the perfect cocktail to kick-start a long table dinner,” Pennefather said.
“Balanced with our Limited Edition Navy Strength Gin, the perfect pre-dinner palate cleanser – and we strongly recommend a sip or two.”
Republic of Fremantle is open 4:00 pm to late on Wednesday and Thursday, and 12:00 pm to late Friday, Saturday, and Sunday.
