WA’s food scene is undoubtedly one of the most impressive in the country, and the Republic of Fremantle’s immersive dinner series is an appropriate celebration of our finest artisan producers.
Following a successfully sold-out season last year, the return of Artisans of The Republic is an event that should be marked on every fellow Perth foodie’s calendar.
Keen diners will be taken on a journey of tastes over four collaborative dinners from a lineup of home-grown artisans, chefs, and experienced cocktail makers serving up plates and cocktails that will have mouths watering.
Sustainable Seafood Soirée

Fins Seafood will be a familiar face for those with a taste for the finest of catches, and their collaboration with Republic is set to bring dishes straight from ocean to plate in an exquisite four-course menu designed by Head Chef Emily Jones.
This bountiful collection of WA’s finest ocean produce will be served up alongside perfectly paired cocktails designed by Head Bartender Max Giudice.

Coffee Infused Feast

Feel the buzz as you embark on a coffee-infused journey and discover the unique array of flavours that can be drawn out of your humble coffee bean.
Offshoot Coffee Head Roaster Rummy Keshet has joined forces with Head Chef Emily Jones to incorporate delightful pops of coffee flavours in every dish, while paired cocktails will give that extra kick as you hear all about the delicate art of coffee roasting right from the source.

Fungi Banquet

Masters of all things shrooms, The Mushroom Guys are bringing all their shroomy goodness to an evening of fun(gi).
The four-course curated menu will draw its inspiration from the cuisine of Asia, paired with four heavenly cocktails and topped off with the chance for diners to explore rare and weirdly beautiful mushroom growing blocks up close.

Dirty Clean Feast

If you consider yourself a devoted fan of meat, Dirty Clean’s eco-friendly farming practices produce some of the best in town.
This dreamy night stars plates of regeneratively farmed eats in a filling feast of four courses made even greater by sipping on some Republic of Fremantle cocktail pairings. You’ll also hear all about why sustainable agriculture is important for the future of farming, and may even leave learning a thing or two.
