Willi’s Pizza Bar, the newest member of Parker Group — the crew behind The Royal Hotel, Fleur, and Busselton Pavilion — has officially opened on the iconic corner of Perth’s William and Wellington Street. This time, it’s not just about great wine — Willi’s has a new obsession: Detroit-style pan pizza, packed with bold flavours and a funky drinks menu to match.
It’s here that modern North American inspiration fuses with Italian favourites. We’re talking thick, moreish, Detroit-style pan pizza alongside fresh side plates to share, all served in a space oozing timeless pizza parlour charm. With a distinct 80s-inspired global disco funk soundtrack to set the mood, red neon flashing from the other side of the Yagan Square, and red chequered floors to match, Willi’s brings a youthful, energetic character to its historic heritage surroundings.
A menu infused with nostalgia

Head Chef Logan Place — also The Royal Hotel and Fleur — and Parker Group’s Head of Culinary Brendan Pratt, have crafted a laid-back yet playful American-Italian menu interlaced with nostalgia, and a Godfather-esque attitude. It’s contemporary comfort on a plate, a nod to Place’s upbringing, and just plain tasty.
Expect Detroit-style pan pizzas featuring bold flavours like Felino with hot honey and mushroom and onion, alongside inventive small plates like whipped anchovy toast, Serrano ham, rockmelon, and verjuice. To finish? Vanilla gelato, olive oil, and sea salt.
A slick and stylish cocktail list

At the bar, Parker Group Head of Beverages Elise Godwin is serving up nostalgic twists on classic cocktail favourites. From the house dirty martini aptly coined the Willi-Nilly — featuring Parker Group’s own Fine & Dandy gin infused with bay leaf and tomato extra virgin olive oil — to the Pecan Old Fashioned delivering butter-washed bourbon and toasted pecan goodness, the cocktail list is slick and stylish with a fusion of cultures, nodding to American styles, and rooted in Italian flavours.
The wine list encourages diners to “go rogue”

The wine list, delivered by Parker Group Head of Wine Cyndal Petty, is as adventurous as it is approachable. Keeping guests guessing, Petty plays with vinos of high drinkability and gets funky with orange and amber drops — a perfect pairing for square pan style. Whether you’re a fan of the classics or feeling adventurous, Willi’s wine list encourages diners to — in Petty’s words — “go rogue” without overthinking it. This is pizza wine at its best — delicious, intriguing, and a little wild.
Open Tuesday from 4:00 pm until late, and Wednesday through Saturday from noon until late, Willi’s offers a fresh, casual dining experience that’s all fun and flavour, and packed with old-school charm.
