Chef Melissa Palinkas Takes Up New Weekend Lunch Residency At Willespie Estate
It’s a new chapter for one of Margaret River’s original estates and one of Perth’s most respected chefs.
Melissa Palinkas takes up a new weekend residency at Willespie Estate from May 30th. Saturdays bring The Long Table: a communal experience around the verandah with fifty people, four courses, and whatever Western Australia’s paddocks, farmers’ markets, and coastline are offering that week. Sundays are Braizen: centred around instinctive cooking over fire with a different hero dish each week and shared plates built around what the season has to offer.
A purpose-built asado fire pit has been installed at the cellar door for the series. It will anchor both days of service, becoming the centrepiece: Palinkas cooking over open flame, in full view, the way she wants to cook.
The residency marks the first major hospitality initiative under Willespie Estate’s new ownership and the first project for Palinkas following the recent closure of her celebrated East Fremantle restaurant Young George after more than a decade.
Willespie has deliberately positioned itself around ‘place,’ not just as a location, but as a designed experience where physical and emotional qualities combine to create belonging. The weekend lunch series with Palinkas is the first major expression of that ambition: a place where great wine, exceptional food, and genuine connection come together in a comfortable setting.
