Sum Yung Guys, the Noosa restaurant Matt Sinclair opened with fellow chefs Jeremiah Jones and Michael Rickard after his run on season eight of MasterChef Australia, is setting up at Crown Perth from September 17th, taking over the Crown Metropol space that once housed Bistro Guillaume.

“WA has some seriously incredible produce, particularly when it comes to seafood, so I’m really looking forward to getting to Perth, getting on deck, checking out the local produce and pulling together the best dishes we can,” Sinclair said.

The Perth menu carries the signatures over: beef rendang, a Southern Thai yellow curry with snapper, the prawn toast with gochu mayo, and hiramasa kingfish with green scud chilli, coconut and laksa oil. It’s the same share-style, pan-Asian cooking the Noosa restaurant built its reputation on.

The residency follows David Thompson, George Calombaris, and South West favourite Yarri Bar + Restaurant in the same pop-up space, with two Michelin-starred chefs also announced for Crown in recent months.

Sum Yung Guys runs until October 24th, open for lunch and dinner Tuesday to Saturday. Those recent residencies have been selling out, so bookings are essential and can be made through the Crown Perth website.
