Crown Perth will host acclaimed chef and restaurateur George Calombaris for an exclusive, bold and spirited four-week dining residency. Greek by George Calombaris follows the critically acclaimed Fireback residency by David Thompson and continues Crown Perth’s offering of exclusive dining experiences and world-class culinary talent.

Drawing on his passion for Greek cooking and his decades of experience at the forefront of Australian dining, Greek by George Calombaris will blend George’s signature flavour with the finest Western Australian produce.

Opening on Friday, June 19th, the pop-up will offer guests a lively and approachable dining experience that blends traditional Greek influences with modern execution and high energy.

From small bites to showstopping share plates, the menu is a love letter to Greek food and culture — generous, seasonal, and designed to be shared around a table with great company. Guests can expect dishes that weave together the flavours of Greece and the bounty of WA.

Standouts include a Spanakopita baked Abrolhos Island scallop, WA Marron kritharaki with stracciatella, and BBQ Fremantle octopus with spicy green latholemono — each a nod to the exceptional local produce that defines Western Australia’s food scene.

Greek by George Calombaris will pop up in the space formerly home to Bistro Guillaume in Crown Metropol until Saturday, July 18th. Open for lunch and dinner Tuesday to Saturday, bookings are essential and can be made via the Crown Perth website.
