Nashville-inspired hot chicken is hitting Perth.

This Saturday 9 January in Mount Hawthorn a Nashville-inspired hot chicken restaurant, Drasko’s will bring a cult American favourite food to Perth.

“There is something magical about turning a humble piece of chicken into an experience that brings tears of pleasure and pain in one mouthful,” Jankovic says.

“Taking inspiration from my time in Nashville and Noma, I look forward to bringing this special kind of experience to Perth.”

Nashville hot chicken is the star of the menu. With five heat levels from Southern (no heat) to Blame Drasko (extra hot), plus an off-menu triple hot ‘Bastard Chilli’, which uses one of the hottest chillies in the world grown in Carnarvon that you have to sign a waiver for to eat.

Other star dishes include house-fermented pickles and sauces, organic hand-cut fries and hearty sides such as Mama’s beans — a vegan version of Serbian pasulj. Drasko’s Hot Chicken heroes Western Australian finest producers including free-range chicken from pastures in the Swan Valley, organic sourdough baked in a 100-year-old oven in Maylands, and produce from local organic and biodynamic farmers.

Gluten-friendly eaters will rejoice for Nashville hot chicken with a GF version of Drasko’s Signature Sando burger that comes with a gluten-free bun from local favourites Monsterella and uses their famous pizza dough made especially for Drasko’s Hot Chicken.

The former My Kitchen Rules contestant Drasko was inspired to create Nashville hot chicken after getting his first addictive taste of it while working at Michelin-starred Noma in Copenhagen.

Drasko’s Hot Chicken is a fusion of fast-casual with fine dining techniques making a ‘fast fine’ restaurant experience and the tradition of Nashville hot chicken accessible to everyone.

Drasko’s Hot Chicken opens officially on Saturday 9 January from 12pm at The Mezz, 148 Scarborough Beach Road in Mount Hawthorn. The restaurant is walk-in only and BYO.
