We all know that Perth is a big “foodie” town, but have you ever wondered where the chef who created your favourite breakfast dish learnt their craft?

Perth’s premiere cookery & hospitality school, the Australian College of Applied Education (or ACAE), takes hundreds of students on a culinary journey every year, teaching them everything from basic knife skills to advanced patisserie techniques and beyond.

Cooking in a training kitchen is one thing, but as we’ve all learnt from reality TV the pressure when it comes to serving actual customers is very different. ACAE regularly holds buffet events to give the students some “real world” experience, and has recently started opening some of these to the public.

ACAE has already held two breakfast buffets this year, and last night saw the launch of its first “street food” event, which featured dishes from Mexico, Spain, France, Japan, America, Vietnam and England – all prepared by the students.

Tickets were only $12 for all you could eat – if you spent Friday night on the couch eating bad pizza and Vegemite chocolate then this is the kind of thing you missed out on!

The buffets are a great opportunity for students to showcase their work, while also serving as important assessments – not to mention a place where Perth foodies can sample fantastic food at a very low price!

This unique version of fish & chips was very popular – salmon with tiny potato chips on pea puree, smoked and served in a jar!
