Local spirits distillery and also a favourite of So Perth, Republic of Fremantle has been crowned Bar of the Year at the 2022 WA Good Food Guide Awards.
A big achievement for the venue which has been around for less than two years – highlighting how hard the hospitality team has worked to create a world class bar and food experience in Perth.
They’ve definitely made a name for themselves, serving impressive craft cocktails, all whilst distilling their own vodka and gin on site. Their flagship range features their award-winning spirits from their Signature Vodka to their Aromatic Gin and Full Bodied Gin.

One of the cocktails you’ll find on the menu this season is the Dancing Queen, inspired by the flavours of pavlova, it’s fun, fruity and features their Full Bodied Gin.
Or a fan favourite of Republic of Fremantle team is the Gin-A-Colada, showcasing their Aromatic Gin, mixed with coconut sorbet, pineapple and raspberry, a perfect sip for this summer.
For something more full-bodied try the Chocolate Thunder, which pits coffee and cacao against sweet Vermouth and gin with Averna for some bitterness.
But it’s not only the drinks which are a stand out for Republic of Fremantle.
Its food is also held in high regard with Head Chef Emily Jones focusing on seasonal and sustainable local produce to create a range of share plates and aperitivo-style snacks designed to perfectly complement the cocktails.
