Two big spirits combine for a new gin and whisky restaurant in the Valley.

The Swan Valley is about to get an exciting new addition from Master Distiller Cameron Syme and his iconic spirit brands.

Limeburners & Giniversity in the Valley will feature award-winning whisky and gin experiences and contemporary dining in a restaurant, bar, cellar door, and function venue. The space will champion local products and include a menu with exclusive gluten-free options, plus plenty of whisky and gin to wash it all down.

Cameron is quite the achiever with three distilleries under his belt and over 180 awards, medals, and accolades from judges all over the world – so to say he knows what he’s doing is an understatement. The opening of his newest venture will mark the first-ever whisky on show in the Swan Valley region as he joins the ranks of over 40 world-class wineries, boutique breweries, cideries, and gin distilleries.

“I have wanted to share my products in the city for a while now, but we had to find the right space. Carilley Estate had the perfect location and structure to work with. We now have the most beautiful garden setting and an ideal location within the Valley, allowing us to build a quality destination for people to visit and enjoy our internationally recognised spirits and experiences,” he says.

The distilling of Limeburners and Giniversity will remain in Albany and Margaret River, but we’ll get a taste of it right on our doorstep with exciting blending experiences on the menu.

When will the Limeburners Giniversity Swan Valley venue open?
